Easy Keto Dessert Recipe: Chocolate Chip Muffins | Grain-Free | Sugar-Free | Gluten-Free

I have been keto for about two years now to varying degrees. Sometimes "dirty" keto and very "lazy" keto. I've lost all my baby weight twice with it and a few months back I confirmed what I should have known all along. I have a high sensitivity to gluten and wheat. I had been using the go-to keto baking substitute, almond flour, but my food sensitivity test showed I am moderately sensitive to almonds too! Hopefully, this recipe can help someone else out there looking to be keto, gluten-free, grain-free, and without almond flour! Sunflower seeds make a great alternative to nut flours.










I had been making keto chocolate chip almond flour muffins weekly until I found this out. So, my sweet tooth searched for a new recipe that is keto, gluten-free, and almond flour free! It would be nut-free but it does contain coconut oil. So, if you're not sensitive to coconut and are paleo, this works for you too.


The sunflower seeds make a really nice flour in my opinion. These chocolate chip muffins are really moist and yummy. I can personally get away with eating one after lunch AND dinner and still manage to lose weight. They only have 3.5 net carbs and are so worth it.




Here's my Keto Dessert Recipe for Chocolate Chip Muffins - enjoy!


Ingredients

  1. 1 package Keto, Grain Free, Sugar Free, Gluten Free, Soy Free, Low Carb Muffin Mix

  2. 3 Eggs

  3. 1/4 Cup melted coconut oil

  4. 1 tbsp Vanilla Extract

  5. 2 tbsp Erytherol

  6. 1/2 cup Keto friendly Vegan Dark Chocolate Baking Chips

Directions

  1. Preheat the oven to 350ยบ

  2. Line muffin pan with 12 liners

  3. Mix eggs, coconut oil, vanilla extract and sweetner in a bowl. Add the mix and combine well.

  4. Add dark chocolate baking chips

  5. Fill each muffin tin a little over 1/2 with batter or distribute evenly between the 12 cups.

  6. Bake for 15-20 minutes or until golden and toothpick comes out clean in the middle of a muffin. Let them cool completely or they will fall apart.
